This list leans towards independents with a story, because a good hotel should be part of the trip, not just where it pauses overnight.
Timing matters more than you might think. Edinburgh in August, during the festivals, books out months ahead at its highest prices of the year, and Highland hotels fill quickly through summer. Shoulder months are kinder on both availability and rates, and some rural hotels close or reduce service in deep winter, so check ahead for a January trip.

When should I book a hotel in Scotland?
As early as your plans allow for July, August, and city festival dates; Edinburgh in August is the busiest hotel market in the country. May, June, and September usually offer better rates and easier availability.
Do Highland hotels stay open in winter?
Many do, and a Highland hotel with a fire on a winter night is one of Scotland's great pleasures, but some rural hotels close or run reduced hours in the depths of winter. Check ahead for trips between November and March.
